Dude, I saw your last post and I’m making Robs sauce tomorrow with a couple of whole chickens. Wish me luck. And thanks. Big ups to Rob!

This is by far the best cut of chicken and it’s dirt cheap. Reminds me of buying $20 briskets.

That’s the way to go. I do the same thing with chicken thighs and pork tenderloins. Cheap and turns out great

I hope you kept cooking. Lots of people seem to think the target for dark meat is 165. It’s way better if you keep going to 195-200 for the same reason you cook a brisket or pork butt that high. Dark meat doesn’t really start to dry out until like 210

One of my go to buys. Usually find a 8-10 lb bag of them at Walmart for a buck or so a pound. Sometimes a little beat up, but, they’re all getting eaten!
That said, I’ll be curious how ICE raids at poultry producers might affect the prices…

One of my favorite things to smoke. I start layering sauce towards the end. Comes out great.

I remember getting 10 lb bags of leg quarters for 1.90 when they went on sale. I’m officially old.
Edit: Those are absolutely beautiful, btw. Would smash with gusto.

Can someone please explain to me how to get this crispy (or at least rendered) skin on the chicken? Every time I try it just comes out like leather

It’s amazing that you can get chicken quarters for less than a dollar a pound but every other cut of chicken is three dollars plus a pound

That looks great. I haven’t had those in years. Just shows how times have changed. These used to be $2.99 Think I’ve decided what I’m making this weekend.

What temp do you cook at? When do you apply sauce?
